SEITAN, CHICKPEA AND MUSHROOM QUARTER POUNDERS - MAKES 4
These are absolutely delicious and very quick and easy to prepare. Perfect for using left over seitan or when you want to use it in a different way. These are great both hot and cold. You will be wise to make more than one batch as these are very tasty and they freeze well.
200g seitan, chopped
1 tin of chickpeas
30g mushroom pate ( I used Redwood Mushroom Pate)
1/2 teaspoon black pepper
1 tablespoon soy sauce
1/2 fresh red chilli (or to taste)
1 tablespoon vegetable oil, for frying
Place all of the ingredients in a food processor and whiz for approx 30 seconds until the seitan has crumbed and all of the ingredients have combined. Remove from the bowl and shape into 4 equal sized burgers.
Over a medium heat, add the oil to a pan and fry for for 3-4 minutes on each side or until cooked through and golden brown.
Serve hot or cold.
